I'm going to try it and replace the ghee with a bit of soy butter. It sounds interesting. I rarely use sage. Makes me curious as to how some of my favorite herbs would taste alternatively. I'm a fan of tarragon and rosemary. Have you tried Trader Joe's Sipping Chocolate?
I also put a couple drops of stevia. I'd like to try other herbs too. I think they go rally nicely with the cacao. No, I haven't tried TJs sipping chocolate, but I've eyed it a few times. You recommend?

Love it! It's seasonal so I grab a few tins. Sometimes I mix a spoonful in my coffee. I'm also a nutmeg junkie. I shave it into my soy protein shake, pour some of the shake over my coffee and then grate more nutmeg on top. I toss cinnamon in the shake as well and add agave.
I will pick some up tomorrow! (If there is some to be had).
Eta: Can't say I'm familiar with soy butter. Where do you get it?
I do something similar with coconut oil. It makes it frothy because I do it in the blender. Never thought about adding sage, but I add espresso or really strong coffee, almond milk, coconut oil, cayenne, cinnamon or Trader Joe's "pumpkin pie spice."
The product is Earth Balance. Sold in any supermarket and it is soy and other vegetable oils.
Ah. I use Earth Balance. I didn't think of it as soy butter, but you are right.
Searched my kitchen for sage and I'm out. I'll still make the cocoa and add something new to it. My options are star anise, ginger, nutmeg or clove. I have more appropriate spices than herbs as I usually buy them fresh.
I settled on a pretty piece of star anise and a pinch of Jamaican Allspice! Not as adventurous as sage but it was a quite nice.

and cinnamon. Made with pure cacao and soymilk. Plus a little bit of ghee. It was really good.
